Yesterday, I got to have a once-in-a-lifetime meal. I won’t say too much about it here, but I will say this: one course was accompanied by a crab broth made by boiling the shells of the crabs that were used in a previous course. There was lemongrass, coconut oil, and galangal in the broth. It was the richest, truest flavor I’ve ever experienced.
